This delicious Pumpkin pie recipe is one of our favorite pies. it is rich, custardy, and spicy, and it can be made in a short amount of time.

Fall is a great time to start making great pies and pumpkin pie is one of the favorites. The pumpkin, cinnamon and ginger are not only delicious, but gives your kitchen a nice spicy smell; a twofer shall we say. There is no need to go out and buy pumpkin spice air spray to make your house smell like pumpkin spice, you already have it!

When we make this, we like to use canned pumpkin puree because we have been using it for years. It just turns out perfect every time. We have tried the natural pumpkin can, but it seems a little too watery and didn't turn out the way we like. There is one important thing to remember when buying canned pumpkin: make sure it is puree and not pie filling.

When you make this delicious pumpkin pie recipe you can use a homemade pie crust or buy one from the store, it will taste good either way. The filling is simple to make, everything goes into the mixer then pour it into the unbaked shell. When it is done you can serve it with a dollop of whipped cream for that little extra something.

Making pumpkin pie-this makes two pies

You can prepare your crust and divide it into two pie pans. Alternatively, you can buy store-bought crust, but don't bake it yet. If you don't want two pies, cut the amount of filling in half or use the remaining filling to make pumpkin puddings.

It is always easier to have all of your ingredients ready to make this pumpkin pie just in case you don't have everything you need.

Put pumpkin, sugar, salt, cinnamon, ginger, eggs, evaporated milk, and a can of water into a mixing bowl. Mix all the ingredients for about three minutes or until fully incorporated. Simple

Pour the filling into the unbaked pie crust shell and bake at 425 degrees for 10 minutes. Then reduce the heat to 350 degrees and continue cooking for an additional 25 to 30 minutes.

This delicious pumpkin pie should be firm, but the center should be just slightly jiggly before you take it out of the oven. You can always test with a knife or toothpick; if it comes out clean, the process is complete.

Ingredients

  • 2 unbaked pie crusts
  • 4 cups of pumpkin puree, large can
  • 2 cups of sugar
  • ½ teaspoon of salt
  • 2 teaspoons of cinnamon
  • ¼ teaspoon of ginger
  • 4 large eggs
  • 1 large can of evaporated milk
  • 1 can of water, use the same can that had the evaporated milk

Instructions

  1. Turn the oven to 425 degrees
  2. Have two pie crusts ready, not baked
  3. In a mixing bowl, add all of the ingredients: pumpkin puree, sugar, salt, cinnamon, ginger, eggs, evaporated milk, and a can of water. Mix till incorporated for about three minutes.
  4. Pour mixture into two unbaked pie crusts and bake in a 425-degree oven for 10 minutes.
  5. Turn the heat down to 350 degrees and bake for an additional 25 to 30 minutes, or until the pie is set and the center is just a tiny bit jiggly.
