This simple egg salad sandwich is great when you want something quick and delicious to eat.

Simple egg salad sandwich this Recipe

Hard boiled eggs are something that you can use in several ways. They can Be used in many different kinds of salads, like chef salad, cobb salad, or potato salad. Put them on sandwiches like BLTs or tuna fish for that extra bit of over the top flavor.

Eggs can also be hard-boiled at the beginning of the week, so you can grab them any time you want. They should last for about a week in the refrigerator, making them perfect for that late night sandwich you want when watching tv.

This recipe for the egg salad filling is very simple, only using 5 ingredients: Eggs, mayonnaise, mustard, salt, and black pepper We know there are other things that you can put into the sandwich like relish or onions, but this recipe always hits the spot fo great egg taste!

Ingredients:

  • Hard-boiled eggs- Of couse you need these, it is a egg salad sandwich after all!
  • Mayonnaise- This adds the moisture and creaminess needed in order to bind all the ingredients together.
  • Yellow mustard- It adds a certain tanginess to the egg salad..
  • Salt- Always used to boost up all the other ingredients.
  • Black pepper- The go-to spice that seems to go in everything, including this.
  • Lettuce- It adds a nice fresh crispness to the sandwich.
  • Bread- In order to make this a sandwich. We used Brioche bread, but you can use any kind that you like.

Making the sandwich:

Make the hard boiled eggs by placing them into a pan of cold water, about 1 inch above the eggs. Add about 1 teaspoon of salt to the water, it seems to help the eggs peel easier. Bring them to a boil, then turn down the water to low and cook for about 17-20 minutes.

Peel your eggs, then put them into a bowl. If you like, you can put the eggs in an egg slicer to slice them. Next, turn the egg around the other way and slice them again, making nice chopped eggs. You can also just cut them up with a knife and fork; whatever you choose to do, it works both ways.

Other simple sandwich that are great to make on a weeknight are our cheesy sloppy joe sandwiches and our BLT with hard boiled eggs. These don't take long to make either.

Now, add the mayonnaise and mix it around a little.

Add the rest of the ingredients, mustard, salt, and pepper. You can always add more or less mustard depending on how you like it.

Toast your bread and get your lettuce ready to add to the sandwich. We like to spread some mayonnaise on both sides of the toast before adding the egg salad.

We like to start with a large scoop of the egg salad, but again, this is up to you. Make the sandwich with the amount of egg salad that you like.

Put a nice crisp leaf of lettuce on top of the egg salad.

Lastly, place the other slice of toast on top of the lettuce. That looks ready to eat...almost.

Ingredients

  • 8 hard-boiled eggs
  • ⅓ to ½ cup of mayonnaise
  • About 1 Tablespoon of mustard
  • ¼ teaspoon of salt
  • ¼ teaspoon of black pepper
  • lettuce, for topping the sandwich
  • Bread, 2 slices per sandwich.

Instructions

  •  In a bowl, chop the egg into small pieces. You can also use an egg slicer, cut once, then turn 90º and slice again.
  • Add the mayonnaise, mustard, salt, and pepper and mix until incorporated.
  • Brush both sides of the toast with mayonnaise and add your egg mixture on the bottom one.
  • Top the mixture off with a slice of lettuce.
  • Add the other toast to the top, slice in half and enjoy with a side of your choice!
