Who doesn't like chicken salad? It's cool, creamy, and a favorite sandwich. Filling a croissant with tuna elevates the sandwich a little.
This is a great chicken salad sandwich on a croissant that will impress your friends for brunch. It also makes a great family lunch. When you make chicken salad, you know exactly what you are getting.
Have you ever gotten chicken salad at a restaurant, only to find grizzle in the chicken? I have, it is not pleasant. My thought is that it doesn't have to be a bad experience, just clean the chicken. Pet peeve
Our chicken salad sandwich is made by putting chicken pieces in the stand mixer for a minute or two. It shreds the chicken nicely.
We like to brighten it up a little when we serve it on Croissants, so we add some sweet red grapes cut in half to the salad. Also, crisp celery gives a great crunch to the salad.
Ingredients
- Chicken breast - we like the white meat for this, but dark meat works just as well. You can also use the meat from a rotisserie chicken.
- red grapes - for sweetness
- celery - this adds crunch to the salad
- onions - give the chicken a great taste
- Mayonnaise - we don't want the chicken dry
- Black pepper - it adds more flavor
- Croissants - for a flaky, buttery bread


Making the Chicken Salad Sandwich
We used three large chicken breasts, which came to 6 cups. We put the chicken breasts into the stand mixer and turned it on for about a minute to shred the chicken for the chicken salad.

Add all the ingredients except the grapes to the bowl with the chicken. Mix everything. More mayonnaise can be added now if needed.


When all of the ingredients are mixed, add the sweet red grapes for more flavor to the salad.

Now fill a croissant with the salad as full as you like and enjoy

Tuna Salad on a Croissant
Ingredients
- 6 cups chopped or shredded chicken
- 1 and ¼ cup mayonnaise
- ¾ cup of red grapes, cut in half
- 1 stalk celery, sliced thin
- ¼ to ⅓ cups of chopped onions
- Black pepper to taste
- Croissants
Instructions
- Slice the red grapes in half, and slice the celery into small slices; set aside.
- Take 6 cups of chopped or shredded chicken and put it into a large bowl. Add the ingredients, except the red grapes. Mix, but if too dry, add more mayonnaise.
- Now mix in the red grapes
- Add some black pepper
- Fill a croissant with the chicken salad.
