Creamed Lima Beans

Creamed lima beans are a great additional side dish with your dinner.  In our house, it is a vegetable that we do not make as frequently as some other vegetables like corn or peas; we think the reason s that it takes no time to pop a frozen bag of veggies into the microwave. Yes, everyone these days are super busy, but sometimes it is worth a few extra minutes to make a little something different. We made some the other day, and they were sooooo good; it didn’t take long to make, and everyone just loved them.

 

 

Making the lima beans:

 

First, start out with a bag of fordhook lima beans, our favorite. You can also use baby limas if you want, but we like the plumpness of the fordhook. Just follow the package directions to make the beans. Our package was 15 oz. and you cooked them with water for about 10 minutes.

Just let the lima beans come up to a boil and pour them in the pot. When they boil again, just turn them down to a simmer for about 10 minutes.

When the beans are done, just strain out all of the water and set aside.

The ingredients for the cream sauce

 

It is like a white sauce, only you add a few extra ingredients to it. There is butter, flour, salt, pepper, chopped onions for that hint of extra flavor and milk.

Put the butter in a saucepan and let it melt.

Add the flour to the butter and stir until the flour is all incorporated.

Add the milk to the flour and butter and stir or whisk until it becomes thick and starts to boil.

Now, add the rest of the ingredients and mix again until all is incorporated into the sauce.

Pour the cream sauce over the lima beans and mix together.

Ingredients

  • 1 ½ cups boiling water
  • 15 oz. frozen ford hook lima beans
  • 3 Tbsp. butter
  • 3 Tbsp. Flour
  • 1 ½ cups milk
  • 1 tsp. grated onion
  • ¼ tsp. salt
  • ⅛ tsp. black pepper

Instructions

  1. Over high heat, bring water to a boil and pour in the lima beans.
  2. Turn the heat lower to simmer and cook for 10 minutes, then drain.
  3. In a saucepan over medium-high heat, melt the butter.
  4. Add the flour to the butter and mix.
  5. Add the milk and bring to a boil while stirring, then turn heat to low and simmer for about 1 minute.
  6. Add the salt, pepper, and the onion, mix till it is all incorporated.
  7. Add the cooked lima beans, mix till incorporated, and pour into a bowl.
  8. Serve as a side of your favorite meal.
