Roasted Grape Tomatoes

Roasted grape tomatoes are cooked with olive oil and Italian seasoning, giving them a slight umami flavor. Then, they are finished with fresh chopped basil tossed into them.

Roasted grape tomatoes are a must-try. They have a more intense flavor when baked in the oven for 20 minutes. They are coated in extra-virgin olive oil and garlic. We give these little flavor bombs more taste by adding italian seasoning, salt and pepper.

Adding roasted tomatoes to some dishes is a great way to up their flavor These tasty little beauties can be mixed with angel hair pasta, for a quick meal during the week, or for you bread fans out, wonderful bruschetta.

Add them to a plate with some burrata cheese for a quick appetizer when company comes. After all, it only takes 20 minutes to roast the tomatoes, then set them next to a round of burrata cheese and some French bread. The warm tomatoes and cheese are a fantastic combination!

Ingredients:

  • Grape tomatoes
  • Minced garlic
  • Salt
  • Pepper
  • Italian seasoning
  • Fresh basil

Making the roasted grape tomatoes:

Wash the tomatoes; take any little green tops off of them and drop them into a bowl.

Add the salt, pepper, and Italian seasoning to the tomatoes.

Now, add the garlic. You can pop the cloves into a garlic press and drop in the garlic. You can also chop the garlic or use bottled minced garlic. Now, add the 3 Tablespoons of olive oil and mix all together.

Place the tomatoes on a sheet pan; no need to oil the pan, there is already plenty of olive oil added to the tomatoes. Bake the tomatoes for 15-20 minutes or until soft and tender.

After 15 to 20 minutes, the tomatoes should be soft and just bursting open.

Chiffonade the basil and add to the roasted tomatoes, then mix gently just until combined.

Ingredients

  • 1 ½ lbs. of grape tomatoes
  • 3 Tablespoons of Olive Oil
  • 3 cloves of garlic, minced. It can also be put through a garlic press
  • ¼ to ½ teaspoon of Italian seasoning
  • 1 teaspoon of salt
  • ¼ teaspoon of pepper
  • 3 to 4 Basil leaves

Instructions

  1. Add the grape tomatoes, olive oil, Italian seasoning, minced garlic, salt, and pepper to a bowl. Then, mix well
  2. Pour the mixture onto a sheet pan (no need to grease the pan) and bake in a 375°F oven for 15-20 minutes. The tomatoes should look ready to burst open; some may already have.
  3. Pour the finished tomatoes into a bowl, then take the basil leaves, chiffonade them, and toss them over the tomatoes. Give a little mix and serve as an appetizer or a side.

Notes

Chiffonade means to roll the basil tightly from the long end. Now take a knife and cut them into thin strips or ribbons as they are referred to.
