We think Cauliflower makes a great vegetable to be drenched in a creamy cheese sauce and topped with more cheese. This is a cheese lover's side dish.
Creamy Cauliflower Cheese makes a great side dish. We take cauliflower and break it into small florets. It makes quite a lot of florets for this delicious dish. We once thought this to be a lonely vegetable for dinner, not eaten as much as potatoes or tomatoes. What a mistake; it turns out the whole family loves this dish.
This side dish has a great cheesy flavor that goes well with the mild flavor of the cauliflower. It has four types of cheese: Cheddar, Fontina, Goat, and Parmesan cheese, which makes it a smooth, creamy side dish to go with any roast.
We just put the florets into a dish, then added a rich, cheesy cream sauce and baked it until it browned on top. We soaked the vegetables in water first, but you can also roast them in the oven first if you have the time. Both ways make for a great dish.
Ingredients for Cauliflower Cheese
- Butter
- Flour
- Milk
- Onion powder
- Salt
- Pepper
- Cauliflower. large head
- Cheddar cheese
- Fontina Cheese
- Goat Cheese
- Parmesan cheese

Making the Creamy Cauliflower Cheese
First, we cut the small florets from the large head of cauliflower, then soak them in cold water for about 5 minutes.

In a pan over medium heat, melt the butter. Add the flour and mix for about 1 minute or until all combined. Add the milk and cook, stirring, until the mixture thickens.



The spices onion powder, salt, pepper, and cayenne pepper go in now.

Mix in the cheddar and Fontina cheese for cheesy flavor

Then top with the pieces of goat cheese and sprinkle with Parmesan.

Cauliflower Cheese
Ingredients
- Large head of cauliflower
- 4 Tablespoons of butter
- 5 tablespoons of flour
- 3 cups of milk
- 2 cups of shredded cheddar cheese
- 1 cup of shredded fontina cheese
- ¼ teaspoon of onion powder
- ¼ teaspoon of salt
- ¼ teaspoon of pepper
- ½ cup of goat cheese, small pieces
- ⅔ cup of Parmesan cheese, shredded
Instructions
- Cut your cauliflower into small pieces and soak in water for about five minutes.
- Melt the butter in a pan over medium heat. Add the flour and stir for about 1 minute.
- Now add the milk and mix until it becomes a little thick.
- Add the onion powder, cayenne pepper, salt, and pepper and mix until all is incorporated.
- Now add the cheddar and fontina cheese and mix.
- Top with pieces of goat cheese and mix in.
- Sprinkle some Parmesan cheese on the top and bake at 375 degrees for 15 to 20 minutes, or until nicely browned.
