Carrots are always a good side dish that goes well with many meals. Add a little butter and fresh dill and it adds extra flavor to your carrots!
Buttery carrots with fresh dill seems like a good choice every once in a while since carrots are one vegetable that everyone seems to like in our house. We try to change our carrot recipes around and try something different with dinner. This one uses butter and dill, which gives it a great flavor. We just planted some dill on the patio and it seems to grow very fast; you get quite a bit, so we used this in our recipe. It was a good choice.
Things you will need:
- Carrots
- Butter
- Dill
- Salt
Making the Carrots with Dill:
We used regular carrots and peeled and cut them on the bias, about ½ inch thick. You can always use a bag of bought carrots that are already cut and peeled, they work just as well. Boil the carrots on high, then, lower the heat to simmer and cook for about 10 minutes.
After 10 minutes, test the carrots with a fork to make sure they are tender enough for you. If the fork goes through the carrot easily, they are done, if not, cook for a few more minutes.
When carrots are tender, put them into a bowl with the butter and dill and mix.
Now they are done! It's very simple to make, but gives the carrots a different but delicious, fresh taste. Serve as a healthy side with your favorite meal.

Ingredients
- 1 ½ pound carrots
- 1 ½ Tablespoons butter *
- 1 Tablespoon chopped fresh dill
- Salt to taste
Instructions
- Peel and cut the carrots on the bias in ½ inch pieces.
- Fill a saucepan with water that will cover the carrots by about 1 to 2 inches. Bring them to a boil, then turn down the heat and simmer them for about 10 to 15 minutes. They should be fork-tender.
- Put the carrots into a bowl and add the butter and fresh dill, then mix.
- Add salt to taste and serve
Notes
*You can use bought carrots that are already peeled for this recipe.
*You can also add a little bit more butter to make them a little more buttery
