We are always looking for another way to cook vegetables. Green beans with peppers and onions are loaded with flavor and they makes a great side with most recipes. Plus, there is bacon in it and how many people don't love the taste of bacon?
There are plenty of other ways to cook green beans, but this recipe is a winner. Everyone here really likes it. We used fresh green beans in this recipe, but you can just as easily used frozen. We also used a red pepper because everyone like the taste, but green peppers works just as well; your choice. We added onions to the mix for that distinct onion flavor that is great in many side dishes.
To round off this side dish with a bit of liquid, we used chicken broth. The chicken broth goes well with green beans and lets the green beans cook to a tender consistency with great flavor.
Ingredients:
- 3 strips of bacon
- 1 lb. fresh green beans or frozen
- ¼ cup chopped red peppers
- ¼ cup chopped onions
- 1 ½ cups chicken broth
Making the green beans:
Making green beans is pretty simple and prepping all of the ingredients first makes it easy. If you use fresh green beans, cut off the tips of both sides of the green beans and rinse them off. When this is done, just chop up some onions and peppers, not that much so it doesn't take too long. You can even buy frozen peppers and onions in the freezer section when you are in a hurry. Last step is slicing the bacon into pieces for easy cooking.
First, you want to cook the bacon in a skillet till it is crispy, then take it out of the pan and set aside. Now, to the bacon grease, add the onions and peppers. Sauté them till just tender.
Now is the time to add the green beans to the pan along with the peppers and onions. Sauté for about 3 minutes.
Add the chicken broth and bacon back to the pan and cook until the green beans are tender about 12-15 minutes.
Serve for a great side with your meal.
