Ingredients:
- Slices of air-fried eggplant
- Marinara sauce
- Fresh mozzarella cheese
Making the Appetizer Eggplant Parmesan:
We like to use some tin foil on a tray sprayed with oil for easy cleanup whenever we can. To make these, just take some eggplant slices that have been breaded. We use our recipe, then add some warm marinara sauce on the top.
Next, we put a slice of fresh sliced mozzarella on the sauce. You can buy the sliced fresh mozzarella in the store so you don't have to slice it yourself. Then, just broil it for a few minutes until the cheese is hot and just starting to brown.

Instructions
- Take slices of some crispy eggplant, then put them on some tin foil on a sprayed tray.
- Top each slice with some warmed up marinara sauce.
- Now, top with a slice of fresh mozzarella cheese.
- Broil in the oven until the cheese is hot and melted and starting to brown slightly.
