Double chocolate muffins give you a great chocolate taste and are loaded on the inside with chocolate chips. What more could you want except a glass of milk or a cup of coffee?
These double chocolate muffins are rich and chocolaty. They have the deep chocolate flavor of cocoa, melted unsweetened chocolate and the delicious semi-sweet chocolate of the chocolate chips to make them even more chocolaty.
We use sour cream and buttermilk in our muffins to make them moist and tender. Sour cream and buttermilk add richness and tenderness to baked goods that we love. We also mix part oil and butter to give these muffins the great butter flavor with the tenderness of the oil.
Ingredients:

Making the Double Chocolate Muffins:
Chop the unsweetened chocolate into small pieces using a cutting board and a knife. A knife with a serated blade works best.
Put the softened butter in a microwavable bowl and add the unsweetened chocolate. Melt by heating every 30 seconds and mixing until the chocolate and butter are smooth.

The chocolate melted

Mix the flour, sugar, baking soda, salt, and cocoa in a bowl. Mix all ingredients, and reserve 3 Tablespoons of the cocoa mixture to mix with the chocolate chips. Set aside

Add the buttermilk, eggs, sour cream, and vanilla to the melted chocolate. Mix to incorporate

Pour the dry ingredients into the wet ingredients and mix.

Mix the reserved cocoa mixture with the chocolate chips so that thet willnot sink to the bottom of the muffin. Now mix the chocolate chips into the muffin mixture.

Fill the muffin tins with the mixture. We used a large ice cream scoop to fill the muffin liners.

The muffins come out nice and chocolaty and filled with chocolate chips.

Ingredients
- 1 stick of butter
- 3 (1-ounce square) of unsweetened chocolate
- ⅓ cup of cocoa
- 1 cup of sugar
- 1 Egg
- 2 teaspoons of vanilla
- dash of salt
- 1 cup of buttermilk
- 2 Tablespoons of sour cream
- 2 cups of flour
- 1 teaspoon of baking soda
- 1 cup of semisweet chocolate chips
Instructions
- Cut the block of unsweetened chocolate with a serrated knife and put into the bowl with the butter. Melt the chocolate and butter mixture in a microwave for 30 seconds, then stir. Do this every 30 seconds until completely melted.
- Mix flour, cocoa, baking soda, and salt in a bowl. When finished, set aside about ⅛ cup of the mixture to mix with the chocolate chips.
- Add the oil, eggs, sugar, sour cream, buttermilk, and vanilla to the chocolate mixture. Mix till blended.
- Add the dry ingredient mixture to the chocolate mixture and mix until fully incorporated.
- Add the remaining ⅛ cup of cocoa mix to the chocolate chips. Add the chocolate chips to the chocolate mixture.
- Using a large ice cream scoop fill a muffin cup. This recipe makes 18 muffins.
- Bake at 350 degrees for 15 to 20 minutes or until a knife inserted in the middle comes out clean.
