This delicious, moist chocolate cake recipe is truly a favorite; loaded with cocoa and enhanced with a touch of coffee and espresso, bringing out the chocolate flavor. This is our favorite cake to make when we are craving some chocolate.
This cake is moist and soft due to the use of oil and sour cream. To enhance the chocolate flavor, we use some hot espresso and hot coffee.

Ingredients for the cake:
- Sugar- This gives the cake the sweetness that it needs.
- Cocoa powder- Gives the cake the signature deep chocolate flavor.
- Flour- This gives structure to the cake.
- Baking soda- is the rising factor in the cake.
- Baking Powder- is also a rising factor in the cake.
- Salt- It is the necessary flavor enhancer.
- Espresso powder- Helps bring out the chocolate flavor.
- Vegetable oil- used instead of butter, and makes the cake moist.
- Sour cream- Another ingredient to keep the cake moist.
- Eggs- We used room temperature eggs, so they blended quickly and smoothly.
- Vanilla extract- Always add it for extra flavor.
- Hot water- It helps the cocoa bloom, releasing a great chocolate flavor
- Hot coffee- Also helps, the cocoa bloom releasing a great chocolate flavor.
Lets get started with the chocolate cake:
We make this chocolate cake in stages. First, the dry ingredients, then the wet ingredients, and finally, the coffee and water.



Put all the dry ingredients in a bowl and mix them together.

Once the dry ingredients are combined, add the wet ingredients (not the coffee and water) to the mixing bowl. The sour cream makes this cake very moist.

Now, add the water and coffee slowly to the mix; coffee enhances the chocolaty flavor and makes the batter thin.

Put the cake into a greased and floured 8-inch cake pan and bake at 350ºF for 30-35 minutes; if you have parchment paper, line the bottom of the cake pan before greasing and flouring it. These layers of chocolate cake are nice and thick.

Ingredients
- 1 ¾ cups of sugar
- 2 cups of flour
- 1 cup of cocoa powder
- 2 teaspoons of baking soda
- 1 teaspoon of baking powder
- 1 teaspoon of salt
- 1 teaspoon of espresso powder
- ½ cup of vegetable oil
- 1 cup of sour cream
- 2 eggs
- 2 teaspoons of vanilla extract
- ½ cup of hot water
- ½ cup of hot coffee
Instructions
- Set oven to 350ºF
- Grease 2 8" by buttering the pan, then butter the parchment paper and dust with flour.
- In an electric mixer, add all the dry ingredients: sugar, flour, cocoa, baking soda, baking powder, salt, and espresso and mix on low.
- Add the wet ingredients: oil, sour cream, eggs, and vanilla on low speed until incorporated. Turn the speed up to medium high for about 2 minutes.
- Turn the speed back to low and add the hot liquids. Incorporate for 1 more minute.
- Pour the batter equally into the cake pans and bake at 350ºF for 30-35 minutes, or until a cake tester inserted into the cake comes out clean.
- Let cool before frosting.
