Lentil Soup
This is a hearty soup that takes a short time to prepare is delicious on a cold night. Add hot dogs and ham for a truly filling meal.

Lentil soup is one of those soups that take a short time to prepare and tastes amazing. I have been eating this my whole life, this happened to be one of my grandmothers go to soups. She always served hers with potato pancakes, don’t really know why.

I always take a pack of lentils and put them into a bowl and run water onto them, strain them good and this will wash off any dirt that is in the lentils.

Next cut a piece of ham into big chunks. I used left over ham since I had it, but you can always buy a nice ham slice if want. Next you cut up the celery and the carrots into slices. When they are all sliced take an onion and chop it into small pieces. I also take the paper off of the beef cubes, so I have everything ready to go.

Soup is almost ready
Put a tablespoon of oil into a large pan and add the celery, carrots and onions and cook for about 5 minutes, then add the lentils and ham. Drop in the beef cubes then add the water. Let the soup come to a boil before you turn down the heat and let simmer for about 1 ¼ hours.

When it is done, I like to cut up some hot dogs into the soup and let them heat up before ladling into a bowl. I also add about a teaspoon of vinegar to my bowl of soup. Delicious, but some of my family don’t like this so it is up to you.
Serve a nice crusty bread with the soup and it is a good hearty meal.

Lentil Soup
We really like a nice soup once in a while instead of a full dinner with meat, potatoes, and vegetables. Mostly, you just put the ingredients together, add them to the pan, and let the crock pot or dutch oven do the work. When it's done, you are rewarded with a steaming bowl of comfort that can only be made better with a piece of crusty bread or some crackers.
It's coming to the cold season and we know many people look forward to a nice hearty soup and one of my favorites is lentil soup. My grandmother made this quite a bit, it was one of her main soup recipes that everyone asked for. She always served hers with a side of potato pancakes; don't know why, but she did.
Making Lentil Soup:
Start by cutting up all of your ingredients for the soup, this way you are ready to just throw everything together and you have time to do what else you want to do.
Cut up 2 carrots and 1 large stalk of celery into slices and set aside. Next take ½ medium onion and dice it up. Then I took a ham steak that I had bought and cut it into semi large pieces, you can use a left over ham or ham bone as well for the flavor.

- Cook Time: 1 hr.
- Total Time: 1 hr. 10 mins.
Ingredients
- 1 T. canola oil
- 12 oz. lentils
- ½ medium onion
- 2 carrots
- 1 lg. celery stalk
- 4 beef cubes
- 1 piece of ham
- 8 cups water
- 3 or 4 hot dogs, cut up into pieces
Instructions
- In a bowl soak the lentils then strain them while running water over them.
- In a large pan put 1 T. of canola oil and let get hot
- Add the onions, carrots, and celery and saute for about 5 minutes
- To the onion mixture add the lentils, ham, water, and the beef cubes.
- Bring to a boil then turn down the heat to simmer.
- Let simmer for about 1 hour or until the lentils are tender
- If the soup isn't flavorful enough just add another beef cube
- When the soup is done just cut up a few hot dogs and let them heat in the soup
Notes
When the soup is done I like to add a small amount, maybe a ½ teaspoon of apple cider vinegar to my soup. This is optional.
A nice warm crusty piece of bread like a baguette or french bread is really good with the soup.
