Grilled cheese sandwiches are always a favorite with the nice crusty, crunchy texture of the bread and the gooey melted cheese inside. Who doesn't remember eating them when they wre kids. A favorite right‽
This is our best grilled cheese recipe, it can be made with any of your favorite cheeses and bread, but we like the flavor of yellow American cheese with a slice of Fontina to boot. Our bread of choice is Brioche which holds its shape well and is baked with more butter and egg for a great taste.
Grilled cheese sandwiches have always been a comfort food when it is cold out and you want a quick meal. Just pare it with a hot bowl of tomato soup and you have a winner. Kids as well as adults love this great sandwich.
Ingredients
- Brioche bread- We like the soft texture of this bread, but another good choice is Sour Dough or good old white bread.
- Yellow American cheese-We like to use other cheese sometimes, but this American cheese is always a winner
- Fontina cheese- It is a great melty cheese to use with the American cheese
- Butter- Always use soft butter so that it spreads easily and doesn't rip the bread.
Making the sandwich
Take two pieces of Brioche bread and butter the two outside sides of the bread. Make sure it is spread over the whole slice so that the bread gets gold and buttery.

Now is the time for the cheese. Put one slice of the Yellow American on the bottom, followed by a slice of the Fontina, and top both off with another slice of yellow American.

We like to add weight to the grilled cheese sandwich recipe so that the American cheese melts perfectly. It is an option, if you don't have a weight you can always press on the sandwich with a spatula. We have done this sandwich both ways and it turns out great.


When finished your bread should have a nice crust on it and the cheese should be all melty when it is done.

Food to pare grilled cheese with
- A hot bowl of tomato soup is the choice of many people
- French fries always go well with a sandwich
- Chicken noodle soup works well
- four bean salad or potato salad, they are tasty all the time
More ways to make Grilled Cheese
- Make your grilled cheese, this one with yellow american cheese and Mozzrella, but spread some mayonnaise on the inside bread slices. Then you add some sliced tomatoes and grill. Really tasty

- Bacon also goes will with grilled cheese, just add some crispy bacon to your sandwich for extra flavor.
- Ham from the deli piled between the cheese and toasted is great and gives you a little more protein for your meal.

Ingredients
- 2 pieces of brioche bread
- 2 slices of Yellow American Cheese
- 1 Slice of Fontina Cheese
- Soft butter to spread on the bread
Instructions
- ISpread each outside slice of bread with the softened butter, make sure to get every corner of the bread for crunchy bread.
- On one slice of bread add the American cheese, then the Fontina, and then another slice of American cheese.
- Put the other slice of bread on top of the cheese with the buttered side facing the top.
- Put the sandwich in a warm pan and top with a weight if you have it, if not just press down with a spatula from time to time. This will help the cheese melt.
- After a few minutes check the bottom to see if it is golden and the cheese is all melty, then flip to the other side. When that side is also done take it out of the pan and enjoy.
Notes
You can use any kind of bread or cheese that you like. It is extra good when you add a melty soft cheese as well.
