This chicken caesar salad is a great meal anytime, but especially in the summer months. It is a cool, crispy alternative to meat and potatoes and everyone likes it. The mixture of lettuce with chicken pieces on the salad makes it really filling. Sometimes, you think a salad will not fill you up, but this one does.
Chicken Caesar salad first reminded us of a salad invented in Italy, you know Caesar, but it turns out to have been invented in Mexico. Who new?
Ingredients for Caesar Salad:
- Romaine lettuce
- Parmesan cheese, grate
- Parmesan cheese, shaved
- Croutons
- Avocado
- Chicken
- Caesar dressing
Assembling the Chicken Caesar salad ingredients:
Romaine lettuce: This is the kind of lettuce used when making a Caesar salad. It is dark green and nice and crunchy. The lettuce is usually cut off at the bottom and then make slices about every 2-inches from the bottom to the top of the rib. We do ours a little differently by cutting off some of the really thick ribs on the lettuce stem. It's our personal preference.
Chicken: It can be any chicken that you have cooked up for the salad, leftover chicken from last night's dinner or meat from a rotisserie chicken bought at the store to save time; Your choice. We used pieces that were fried up since everyone loves fried chicken in our home.
Avocado: We have found that when picking out an avocado, give it a little squeeze. It should give just a little, you don't want them too soft.
Cheese: Some grated on the salad just mixes in with every bite, but the sliced cheese makes it look impressive. We just love cheese in a salad. Just take a piece of parmesan and use a potato peeler to slice the cheese.
Croutons: They give the salad extra crunch. Caesar croutons are usually a little bigger than regular croutons that you buy, but are really good.
Arranging your salad to look good:
Start your chicken caesar salad by putting the lettuce in a large bowl so there is plenty of room to mix in the dressing. Now, add grated parmesan to the bowl, as much or little as you want. Now, add some Caesar dressing on the salad and mix it together till coated. Put the lettuce and grate cheese into a pretty bowl and top with chicken pieces, avocado slices, nice chunky croutons, and some more shaved parmesan cheese to the top.
You can also put everything on a tray, if you have a lot of people. Set the dressing on the side and let everyone get their own portion. We used our homemade Caesar dressing, but you can use whatever dressing you like.

Instructions
- First, take the lettuce and cut it into pieces, Cut the end off of the lettuce and chop into about 2-inch pieces from the bottom of the rib to the top.
- Put the lettuce into a large bowl and add the grated parmesan cheese.
- Top this with the Caesar dressing and mix until all the lettuce is slightly covered.
- You can transfer the salad to a pretty bowl or tray and top with Chicken, avocado (optional), croutons, and shaved cheese.
