Many times when people make spicy sauces for chicken, they are using it for chicken wings. However, spicy sauces work perfectly well with other pieces of chicken. Spicy Mango Chicken Quarters don't require any marinating, but the sauce is so robust and flavorful that it isn't necessary. Just season, grill and baste the chicken and you have a wonderful meal in a short amount of time. As shown, Spicy Mango Chicken Quarters pair well with corn and potatoes.
In a medium pan on medium-high heat, heat oil and add the garlic and ginger till browned (about 1-2 minutes).
Whisk in the remainder of the ingredients except the salt and pepper.
Let come to a boil, then lower heat to medium and soft boil for 20 minutes, until desired thickness. Let cool.
For Chicken:
Oil and preheat grill over medium-high heat.
Pat down the chicken with a paper towel until completely dry.Season generously with Salt and Pepper.
Grill chicken quarters directly over the flames and grill till charred on outside, about 2 minutes per side.
Move chicken quarters to indirect heat, and cook grill covered for 45-55 minutes.
When thoroughly cooked, turn off burners and respray the grill, so that the chicken won't stick when glazing with sauce. Then, turn on grill again to medium high.
Baste the chicken with the sauce and grill them directly till the sauce is caramelized on the chicken on both sides
Once done, place the chicken on a plate and rest for 5 minutes.
Serve with your favorite sides if you like.

- ½ cup hot sauce (any kind)*

- ¼ cup tomato paste
- ½ tsp. onion powder
- 1 tsp. worcestershire sauce
- 4 chicken leg quarters
- freshly ground salt
- freshly ground black pepper
- Spraying oil for grill

* The hot sauce that you use will affect how hot the sauce will be.
