This quick easy Greek Chicken marinade recipe is made with a marinade using many of the ingredients found in Greek dishes. There is extra virgin olive oil, fresh lemon juice, and oregano, don't want to forget that.
We are always trying to find new marinades for grilled chicken. Grilling chicken is a favorite around our house. It is flavorful, healthy, and quick to make. You get plenty of flavor from the marinade that you put together. Another very flavorful marinade is our Grilled Chicken Marinade recipe several times over this past summer and it is tasty and quick to make, something that you need every once in a while. This particular Greek marinade has great flavor and it pares well with the Greek salad they we make.
What we like also about this Greek chicken marinade is that you can prepare everything in advance. It is a quick and easy chicken marinade using ingredients that you probably already have. You can let the chicken either marinate overnight or for just a few hours.
Ingredients for Grilled Greek Chicken Recipe:
Chicken breasts- You can use this marinade with chicken thighs or drumsticks if you prefer.
Olive oil- What is more Greek than olive oil, the Greeks used olive branches during the first Olympics.
Garlic cloves- Garlic releases a great flavor for the chicken pieces.
Oregano- Another flavor always associated with Mediterranean dishes.
Zest of a lemon- The great citrusy flavor adds depth of flavor to this marinade.
Lemon juice- A little more lemon can't hurt the flavor.
Salt- It always adds flavor to the marinade.
Pepper- Always a favorite spice.
Rosemary- This adds a touch of savory to this marinade. Rosemary is a strong herb, but used right.
Dijon mustard- It gives great flavor to your dish and adds some savory umami flavor.

Making the Grilled Greek Chicken:
Put all of the ingredients into a bowl. Everything will come together quick easy Greek chicken marinade

Whisk the ingredients together until it is all combined and gets a little thicker.

Put your chicken breasts into a bag and pour all of the marinade over the chicken pieces. Close the bag and mix the chicken with the marinade. Set in a bowl and refrigerate. You can also pour the marinade over the chicken in a bowl and marinade the chicken without a bag.

When the chicken is marinated spray the grill with pam or brush a little oil on the grates before placing the chicken on the grill. Cook on medium heat for about 3 to 4 minutes or until the chicken looks nice and brown. Turn the chicken and cook on the other side for another 3 to 4 minutes. Chicken breasts should have a temperature of 165ºF degrees when they are done. Discard the rest of the marinade.

Grilled Greek Chicken
Ingredients
- 4 pieces boneless, skinless, chicken breasts
- ⅓ cup olive oil
- 2 garlic cloves, minced
- 1 ½ teaspoons dried oregano
- 1 lemon, zested
- 3 Tbsp. lemon juice
- 1 teaspoon salt
- 1 teaspoon pepper
- ¾ teaspoon rosemary
- 1 teaspoon Dijon mustard
Instructions
- Mix all of the ingredients until combined.
- Pour into a zip lock bag or a bowl and add the chicken breasts.
- Refrigerate for about 2 to 4 hours.
- When done marinating, oil and preheat grill to medium heat.
- When ready to grill, place the chicken on the grill, discarding the marinate. Grill the chicken for 3-4 minutes per side or until thoroughly cooked.
