Mashed potatoes patties that are golden brown on a tray and one ready to serve on a plate this Recipe

Crispy Mashed Potato Patties

Thinking about what to do with leftover mashed potatoes? We know there are many times that we make too many mashed potatoes and put them away for leftovers. Sometimes, they get pushed back in the fridge and never get used, so, make crispy mashed potato cakes! These are great with eggs for breakfast or just eat them with a little salt. They stay soft on the inside and crispy on the outside.

Ingredients for mashed potato patties:

  • Leftover mashed potatoes
  • Butter
  • Oil
  • Salt

Making crispy mashed potato patties:

You start by forming cold mashed potatoes into balls with an ice cream scoop, then form them into a patty with your hands. When they are all formed, just add some butter and a little oil to a skillet. When they start to crisp, just turn them and cook the other side until it is crisp and brown. Cook them on a medium heat so they don't brown too quickly.

Cook the potato patties in a little bit of butter and oil. If the pan becomes too dry, just add a little more butter and oil to the pan.
