Coconut Chocolate Chip Cookies

We hope everyone is doing well and staying healthy in these times. We know it is hard trying to get the cooking ingredients that you want, but we guess it is time to check out what is in the freezer and behind the ice cream. We know we like to keep nuts in the freezer, so finding coconuts, walnuts and chocolate chips, we decided to make some cookies for the family to enjoy.
Chocolate chip cookies are always a favorite, so after checking what ingredients we had, the cookies were a definite go. We started by getting a bowl out and mixed the dry ingredients together, then we set the mix aside.
Next, the softened butter and sugars were put into a bowl of an electric mixer and let the mixer do its job. It took only a few minutes to mix the sugars and butter to a nice light color. Having the butter at room temperature is big help in whipping this mixture.

The mixture always looks good to us when it looks like this. We happen to think butter and sugar tastes pretty good. Anyway, now is the time to add the eggs, one at a time. Looks even creamier. Delicious! Now, just add the vanilla so that the cookies have that vanilla flavoring that makes them so good. Vanilla is something that smells really good and makes whatever recipe it's in always good. Have you ever tasted vanilla by itself, yuck! It's bitter! Who would have known if you didn't try it once?

Now, add the flour mixture to the mixing bowl a little at time. Mix until incorporated; about two minutes. The mixture will get a little thick.

Now comes the fun part, at least we always like adding tasty ingredients to the cookie dough. We put semisweet chocolate chips and a cup of chopped walnuts in and it looked great, but Travis thought adding a little coconut to the mix wouldn't hurt. He was right, just a little bit and everyone asked if there was coconut in them. Really tasted good.

Ingredients
- 1 ½ cups butter, room temperature
- 1 ½ cups sugar
- 1 cup brown sugar
- 2 eggs
- 1 ½ tsp. vanilla
- 3 ½ cups flour
- 1 ¼ tsp. baking soda
- ½ tsp. salt
- 18 oz.semi sweet chocolate chips
- 1 cup nuts, any kind
- ¼ cup shredded coconut
Instructions
- Mix together the butter, sugar, and brown sugar in an electric mixer till combined.
- Mix together the dry ingredients, then add to the sugar/butter mixture. Mix until incorporated.
- Add the eggs one at a time.
- Next, add the vanilla.
- Now, add the chocolate chips, chopped nuts, and the coconut. Mix till well incorporated, it will be a pretty stiff dough. If needed stir in the chocolate chips, nuts, and coconut.
- Drop cookies onto a parchment lined cookie sheet.
- Bake at 375ºF for 10 to 11 minutes.
