Chocolate Ganache

Chocolate ganache is made with chocolate and cream. You can add some flavorings, if you like, or some light corn syrup to give it a great, shiny look.

Chocolate ganache takes no time to make and it can be used in many different ways. If hardened in the refrigerator, you can use it for an icing for cakes and cupcakes by mixing it in a stand mixer till the consistency is right to spread. Another way to use it, especially if you have a little of the ganache left, is making truffles out of it. Just let the chocolate harden, form it into balls, and roll in some cocoa.

Chocolate ganache when it is just made is not hard. This kind of ganache can be cooled and used to cover donuts, or dip cream puffs in. The chocolaty taste makes everything it's on silky and delicious.

Ingredients for chocolate ganache:

  • heavy cream
  • chocolate, chips or cut into pieces
  • light corn syrup, optional

Making Chocolate Ganache:

In a saucepan, bring the cream to just below boiling. When done, pour over the chocolate chips in a bowl and let site for 1 to 2 minutes. This will soften the chocolate chips. You can add some corn syrup here for a little shine.

Mix the cream into the chocolate until they are combined.

Keep mixing until the chocolate is thick and creamy. It is now ready to spread on cream puffs, or cakes.

Ingredients

  • 1 cup heavy cream
  • 2 cups chocolate chips*
  • 2 teaspoons light corn syrup, optional

Instructions

  1. In a saucepan, heat the cream, just under boiling.
  2. In a bowl, add the chocolate chips.
  3. Pour the cream and corn syrup, if using, into the chocolate chips and mix till smooth and incorporated.

Notes

*You can use dark chocolate instead of chocolate chips. If you are not using chocolate chips, you can chop pieces of chocolate and use them like chocolate chips.
