Chipped Beef

Chipped beef is an old recipe that was served a lot in the military. It is an inexpensive meal and a quick recipe to make. It is a comfort food with its creaminess and flavorful bits of beef all mixed in and served on toast.

Chipped beef has several names some call it creamed chipped beef, others call it "frizzled beef" a Pennsylvania Dutch name. The military called it SOS or "shit on a shingle", not the name we want to call it.

My grandmother always called it frizzled beef and she would make this on many occassions. Sometimes someone would want it for diner, so it makes a really good dinner as well, just add some fried potatoes and you are all set.

Chipped beef is a white cream sauce seasoned with beef cubes and chopped dried beef added to the sauce. It is a comfort food that we hope you will enjoy as much as our family does.

We like to use Carson's brand dried beef in the cold section of the grocery store, because we have used this brand for years. We also chop the beef up in the blender or Cuisinart, as a result, you have nice small pieces to add to the sauce. Many people pull the dried beef apart, but we like the small pieces.

Ingredients:

  • Margarine or butter
  • Flour
  • Milk
  • Dried beef
  • Beef cubes

Like to have the ingredients ready before we make the sauce.

In a blender or Cuisinart, add the dried chipped beef and chop it until all the pieces are chopped, this gives you nice size pieces when you eat it. Set this aside until the sauce is made.

We put the butter into a saucepan and let it melt. Add the flour and mix for 1 minute for the raw flour taste to leave then add the milk. and add the beef cubes, stir until al dissolved.

Add the flour and mix for about 1 minute to get rid of any raw flour taste. Then add the milk bring to a boil and cook for about 1 minute so that it thickens.

We add the beef cubes now and let them melt in the hot sauce to give great flavor.

How to serve it

The usual way we serve creamed chipped beef is over toast, it is a great breakfast food. You can use any kind of bread that you like, but we like typical old white bread. You can also serve chipped beef over biscuits or even a baked potato because they all taste very good together.

What kind of dried beef to use

We have always used Carson's dried beef in the refrigerated section. Many stores don't carry this brand, but we ask for it and they get it in for us. You can also use jars of dried beef from Armour or Hormel this works just as well. Many people say you can use Buddig, never tried it, but people say it works. People also make creamed beef by sing ground beef in the recipe instead of dried beef.

Ingredients

Scale
  • 4 T. margarine or butter
  • 4 T. flour
  • 2 C. milk
  • 1 pk. (3 oz.) cured dried beef
  • 2 beef cube

Instructions

  1. Put dried beef into a Cuisinart or blender and grind until finely chopped. Set aside.
  2. Melt margarine or butter in a saucepan, when melted, add flour and mix
  3. Add the milk and cook to a boil, then turn down the temperature and cook for about 1 min.
  4. Now add the dried beef and incorporate
  5. Serve over toast
