Chicken Croquettes Appetizer

Made these croquettes for appetizers, just small ones. You could definitely make them larger for dinner. We also loved them with cream sauce on the top.

  • 4 Tbsp. butter
  • 1 Tbsp. chopped onions
  • 6 Tbsp. flour
  • 1 1/2 cups milk
  • 2 tsp. lemon juice
  • 1/2 tsp. salt
  • 1/4 tsp. black pepper
  • 2 cups chicken
  • 1/3 cup flour
  • 2 eggs
  • 2 Tbsp. milk
  • 1 1/2 cups plain bread crumbs

  1. In a saucepan, melt the butter, then add the flour and stir until mixed.
  2. Add the milk and whisk until all combined and thick. Then, add the lemon juice, pepper, and salt and mix till combined.
  3. Add the chicken and stir into the milk mixture, then put into the refrigerator and chill for 1 hour.
  4. Once chilled, take a small amount of mixture and form into a ball then slightly flatten. (we used a medium ice cream scoop).
  5. Mix the dipping ingredients into 3 bowls: First bowl, the flour, second bowl, mix the egg and milk, and third bowl, add the breadcrumbs.
  6. Dip the mixture into the flour, then the egg mixture, and then the breadcrumbs.
  7. Put each round into the oil and cook for about 2 to 3 minutes on each side.
  8. Serve with cream sauce.

These delicious little appetizers can be made with a big ice cream scoop for a dinner size. Really good
