Barbecued Chicken Kebabs

Ingredients

Units Scale
  • 2 lbs. boneless, skinless, chicken breasts*

Brine:

  • 3 cups of water
  • 1/4 cup salt
  • 2 Tablespoons sugar

Rub:

  • 2 Tablespoons brown sugar
  • 1 1/2 Tablespoons paprika
  • 1 Tablespoon chili powder
  • 1 Tablespoon garlic salt
  • 1 tsp. cayenne pepper
  • 1/4 Tsp black pepper

Barbecue sauce:

  • Use the kind that you like, we used Sweet Baby Rays

Instructions

  1. Cut the boneless skinless chicken breasts into about 1-inch pieces.
  2. Make a brine of the water, salt, and sugar. Add the chicken pieces into the brine and refrigerate for about 3 hours.
  3. Mix the ingredients for the rub and set aside.
  4. Take the chicken pieces out of the brine and dry them off with paper towels.
  5. Put the chicken pieces into a bowl and add the spice rub to the chicken. 
  6. Take skewers and thread pieces onto the skewers. If using metal skewers, you can do it right away. If you are using bamboo skewers, make sure to soak them in water for at least 10 minutes before adding the chicken pieces.
  7. Spray and heat the barbecue grill for about 10 to 15 minutes before adding the skewers onto the grill.
  8. Cook one side of the chicken skewers, and when done, turn the kebobs.
  9. Add the barbecue sauce to the kebobs when they are cooked. Add more barbecue sauce, if you'd like.
  10. Take off the grill when the chicken is fully cooked.

Notes

*You can use chicken thighs pieces, if you'd like.
